This post is WAY overdue...it's embarrassing! I don't know how and I don't know why, but these weeks are just passing by and I feel like there are always a billion things happening! I've been wanting to share this curry quinoa recipe for a while! I posted it to my instagram (@tveenverano_RD) a while back, but never got around to actually writing out the recipe for you guys! So, as I sit outside of Starbucks waiting for my husband to get off work so we can go to DISNEYLAND (YESSSSS) I decided to finally just type up the recipe and press publish! SO, here it is!
Makes 4-6 servings whether you are using this as the pain course or as a side!
1.5 cups quinoa
3 cups water
1 cup kale
1/2 white onion
1/2 cup sliced mushrooms
1 T olive oil
1 T curry powder
1/2 T turmeric
2 cloves garlic
1 tsp salt
First, cook the quinoa in the water for about 20 minutes, or until it is fluffy. While the quinoa is cooking, chop up all your veggies! Cook the veggies in a separate pan with the olive oil and spices until they are soft.
Once the quinoa is done cooking, add the cooked veggies, curry, turmeric, garlic, and salt to the quinoa. Cook on low for another 5 minutes and stir in all the ingredients and spices until they are evenly mixed. Then, serve!
This recipe is super simple, delicious, gluten-free, and a plant-based protein that will keep you full! What could be better? :) I hope you enjoy this recipe, and I hope to be writing again VERY soon!
