Instant pot Lentil Soup

It’s finally Fall!! Which means it’s soups and stews weather and I could NOT be more excited!

This soup is a family favorite! And I’m happy to report Emma is obsessed with it and eats bowls at a time. It’s also a great budget friendly meal because the ingredients can be found in your kitchen at all times! Plus it’s so easy to whip together, especially on these cooler fall evenings when you want a warm and comforting homemade meal. Pair with a salad, some crackers, or just enjoy on its own! Makes 6-8 servings

2 cups red lentils 

1/3 cup short grain rice 

1 cup diced onion 

1/4 cup butter 

6-7 cups chicken broth 

1/2 tsp salt 

1 tsp cumin

(This is the size of rice you want to use…short grain!)

Step one is to throw everything in the Instant pot and stir.

Secure the lid shut and turn the knob to sealing.

Set to manual for 7 mins and manually release pressure. 

Finally, serve up and enjoy!
